Trout with Potatoes and Cauliflower (aloo kophi diye maacher jhol)

Cut cauliflower and potatoes into big pieces
Heat oil in a pan. Add 1/2 tsp salt and fry the potatoes and cauliflower. Turn down the heat to medium.
Cover with a lid and leave it on the gas.

Add salt and turmeric to the fish pieces.
Take another container, heat oil to fry the fish pieces. Add a bit of salt to the oil before frying the fish. It prevents them from getting stuck to the pan.

In the container that potatoes and cauliflower were being cooked in, add turmeric, coriander, cumin, ginger, chili powder, finely chopped tomatoes (a little) and a bit of water. Make sure the whole thing is "makha-makha"
Cover this and turn the heat to medium.

Go back to frying fish pieces.
Keep stirring the other pan intermittently.
It the water has dried up, add some more hot water and sugar and cover it again
After a while, add in the rest of the water needed for the curry
Turn the heat to high and let it boil. Turn the heat down the medium once it starts boiling

Add in the fish to this when the veggies are mostly done.
Turn the heat back to high and let it boil.
Add in salt and sugar as needed
Turn down the gas (or up) to get the right consistency of the curry.

    1 egg  1/3 cup whole wheat flour  1/3 cup milk  1/4 cup water   1/2 tsp vanilla extract  1/4 tsp salt  2 tbsp butter   After making batter let it rest for 20 minutes  

Ricotta pancakes nyt cooking

 1 cup ricotta or cottage cheese 1 cup sour cream or plain yogurt 3 eggs, separated ½ teaspoon baking soda 1 cup all-purpose flour Dash salt 1 tablespoon sugar 2 tablespoons lemon juice 2 teaspoons grated lemon zest Butter or grapeseed or other neutral oil as needed Step 1 Beat together the ricotta or cottage cheese, sour cream or yogurt and egg yolks. Combine baking soda, flour, salt and sugar. Beat egg whites until fairly stiff but not dry. Step 2 Heat a griddle or large skillet over medium-low heat while you finish batter. Stir flour mixture into cheese mixture, blending well but not beating. Stir in lemon juice and zest, then gently fold in beaten egg whites; they should remain somewhat distinct in batter. Step 3 Add about 1 tablespoon butter or oil to griddle or skillet and coat surface. When it is hot, add batter by the heaping tablespoon, making sure to include some egg white in each spoonful. Cook until lightly browned on bottom, 3 to 5 minutes, then turn and cook second side.
