Mutton (Kosha mangsho)

Marinate mutton with haldi, jeera pd, dhania pd, red chilli powder, salt, little mustard oil, ginger, garlic paste, one tsp lemon juice, 4/5 spoon dahi. Marinate as long as possible. At least an hour. Chop onion finely. First  fry a handful crispy and set aside. Put tejpata, dry red chilli in oil. After the smell comes out, add rest of the onions. Sprinkle little bit salt on it. Add mutton. Cook in low heat When water nearly dried add hot water. Pressure cook. Add salt sugar green chili and fride onion before closing the lid. For 2 lbs of mutton, add about 3 tsp of each spice. 1 large onion (American size)

Nariyal Laddu

Heat korai a little bit. Add half tsp ghee and 1/2 green elaichi. Add desiccated coconut (powder) and sugar mix. Stir. When become sticky.  add grated khoa and some milk . Dry. Cook in low heat. Make laddu when hot. Put oil in your palm while making the laddu Or you can use condensed milk instead of khoa, follow the same recipe. Then you don't have to add sugar, khoa or milk. It is much easier and faster

Mix in a food processor to a flour like texture 1 cup chopped dates measured after chopping 1 cup walnuts 1/2 cup flour 1 tsp baking powder 1/4 cup sugar Step 2 Beat till thick n foamy 2 egg toons 1/2 cup sugar 1 tsp vanilla Step 3 Beat till peaks form 2 egg whites 1/8 cup castorsugar to be added after a few minutes beating Fold in the 3 mixtures and bake at 180 • C for half an hour This below is a new Zealand recipe I have noted ( v good ) 4 oz ( 100 gms ) butter 4 oz ( 1/2 cup sugar ) Cream the two and add essence and 1 beaten egg Add 1+1.5 one and a half cup flour 1/2 tsp baking powder Mix to a soft dough and line a dish with this pastry Cover with sliced apples Mix 21/2 to 3 oz’s brown sugar 1 tsp cinnamon 1/4 tsp nutmeg Chopped almonds Sprinkle this on the apples Dot with butter Bake at 400 F for 30 to 40 mins

I am sending u both recipes 1.Chilly pickle    Ingrds 1. Green chillies (ekdum tikhiwali)500 gm finely chopped. 2. One big bottle vinegar (3/4 of it to be used for grinding purpose) 3. Four big pods of garlic and 100gms ginger ground to a fine paste using vinegar. 4. Three tablespoons methi dana ground to a fine paste using vinegar 5. Three tablespoons jeer ground to a fine paste using vinegar. 6. 100 gms.tamarind soaked in vinegar for an hour and grind  and strain to take out the pulp. 7. One big cup sugar. 8.kadhipatta (soft leaves )one big cup -full. 9. Mustard oil 450 ml. 10. Haldi 2 teaspoons. 11. Kashmiri Mirch powder one teaspoon. 12.salt to taste. Method---- 1. [10:04 PM, 11/3/2018] Mummy: Cut each white bread in squares Meanwhile check the recipe on the custard ka pack for setting custard And measure out the ingredients Ie milk sugar n custard Boil the milk with the sugR Keep it warm Fry the bread pieces in desi ghee  to a nice darkish brown . And immediately dunk  in n take out the fried bread from the warm sweet milk And arrange on a platter . Now dissolve the custard powder in v little water N pour in the milk after letting it come to a rolling boil . Keep stirring the custard to prevent lumps Within minutes the custard will thicken . Make sure it’s made in a heavy bottom pan N Being wTchful will prevent the custard from burning .
